The 898 squash is a single-serving butternut with excellent, sweet flavor. It's the result of a collaboration between a chef, Dan Barber of Blue Hill at Stone Barns, and a vegetable breeder, Michael Mazourek of Cornell University. The 898 squash is featured in the Dan Barber episode of Chef's Table, and was selected by Bon Appetit chefs Christina Chaey and Claire Saffitz for the Making Perfect series. Small but mighty. $3.50 per pound (usually about three squash).
